Recall that sunny memory of biting into a fresh juicy mango, first of its season, in your grandmother’s court yard in summer holidays or the excitement of diving into a huge, luscious, chilled watermelon with your cousins as you partook of the joy of nature’s bounty.
Come Summer and we yearn to cool our parched throats from time to time as the temperature sores and the sun beats down strongly. Summer is also the time when we need to up our consumption of liquids and keep ourselves well hydrated. We naturally begin to gravitate towards drinks and food options that are cooling and refreshing. Here are some house specialties comprising salads and coolers, to beat the weather in easy yet delectable ways.
Take a bowl. Chop some lettuce leaves and onion rings. Mix with cherry tomatoes and pomegranate seeds. Throw in some cubes of Feta cheese. Pour olive oil, sprinkle some salt and toss it all together.
Take a tall glass. Add juice of half a lemon. Pour sugar syrup to taste. Put one tablespoon of crushed mint. Pour half a glass of Limca, some crushed ice and top with club soda.
Chop some mango. Slice spring onions, fresh red chillies, coriander. Grill marinated (in soya sauce, ginger, garlic, lime juice) chicken on high flame that is then chopped into bite size pieces. Finally, all the ingredients are tossed together and some lime juice squeezed into it. The tangy refreshing salad is ready to be had as a meal by itself.
Take some chunks of frozen mangoes, half cup milk, half yoghurt, a spoon and a half of honey, a stick of cinnamon and half a lime. Put it through a liquidiser. Put lots of ice and serve in fluted glasses.
Cube some watermelon. Take a handful of basil leaves. Mix them both in olive oil and top with crumbled Feta.
Take some frozen watermelon cubes. Put it through the liquidizer. Serve with mint leaves and a dash of pepper.
